Day 29
Today was our poach and roast competency in the Skills kitchen, and my partner and I kicked ass. I am really happy with our final score, 96/100. The only thing that was wrong was not removing enough of the skin on a shallot. We got docked two points for being a couple minutes late too, but that was the stupid oven’s fault. The chicken should have taken 30 minutes, but took an hour instead. with 20 minutes to go, we were done and just waiting for the chicken to finish. Had we served it to the Chef undercooked it owuld have cost 12 points, and you can’t do that at a restaurant, so we did the right thing, but it still wasn’t our fault. The rice pilaf also took extra long to cook, so the oven must have been running cold today. Everything tasted great though.
We also had the Skills written final today, and I scored 92/100 on it. The ones I missed are the ones I think I guessed on, but I’m not sure. Tomorrow is the grill and sautee final and I’ll be working with the same guy, so I expect us to kick ass again. The nutrition final is tomorrow too which will be easy because I already have all the answers, I just need to review the questions.
Next week I start Butchery, which doesn’t sound very exciting to me. A lot of classmates are excited because they think it will be cool to work with meat. For me, it is 3 weeks of not cooking, so that isn’t very exciting. I’ll have to cook a lot from home to make up for it.
It looks like I will get an A in both Nutrition and Skills, so I will have a 4.0! A good way to start the program I think.
